Burger Tacos

An easy to make combination of two of my favourite things. Burgers and tacos! This meal requires very little prep or cooking prowess and the results are a high protein, delicious meal that has saved my ass more times than I'd care to count. Dress it up with as many salads as you would like or keep it basic, this meal is so diverse and easy I'm mad that I didn't come up with it sooner.

Makes 3 Serves (2 Tacos per Serve)
500g Grass Fed Extra Lean Beef Mince
6 Tortillas (Corn or Wheat)
Pinch Sea Salt
Bag of Shredded Cheese
1/2 Shredded lettuce
24 Pickles slices
1/3 Minced Onion
1/2 Tomato Sliced

Start by heating up your pan or skillet over medium heat. This step is crucial as it ensures that the tortillas will cook evenly and become crispy, providing a perfect base for your delicious tacos. While the pan is warming up, take a moment to lay out all 6 tortillas on a clean surface. It’s important to choose tortillas that are fresh, as they will hold up better during cooking and provide a delightful texture.
Next, take the 500g of mince—whether it be beef, chicken, or any other preferred meat—and
evenly distribute it across the 6 tortillas. Make sure to spread the mince out so that each tortilla gets its fair share. Once each taco has a generous layer of mince, use your fingers or the back of a spoon to gently press the mince into the tortilla, ensuring it reaches the edges. This not only helps the filling stay in place but also allows the flavours of the meat to meld with the tortilla as it cooks. Don’t forget to season the mince with salt and pepper to taste, enhancing the overall flavour profile of your tacos.

Once your tortillas are prepared, carefully place them face down in the preheated pan. Allow them to cook for about 2 minutes; this will help the tortillas develop a nice golden-brown colour and a satisfying crispness. After the first side has cooked, flip the tortillas over to cook the other side. This second side will also get crispy, creating a delightful texture that contrasts with the soft mince inside.
As the tortillas finish cooking, evenly spread a generous amount of cheese over the cooked side of each tortilla. The heat from the tortilla will begin to melt the cheese, creating a delicious gooey layer that binds the ingredients together. You can use a variety of cheeses here—cheddar, Monterey Jack, or even a spicy pepper jack for an extra kick.
While the cheese is melting, take the time to prepare your fresh toppings. Shred up some crisp lettuce, which will add a refreshing crunch to your tacos. Next, slice and dice ripe tomatoes and onions, which will provide a burst of flavour and colour. The combination of these fresh ingredients will elevate your dish, making it both visually appealing and delicious.
Once everything is ready, it’s time to assemble your tacos. Start by placing a portion of the cooked mince on each tortilla, followed by a sprinkle of the diced onions. Next, add a generous handful of shredded lettuce and a few pieces of diced tomato to each taco. For an extra layer of flavour, you can also add pickles, which will contribute a tangy crunch that complements the richness of the mince and cheese.
Finally, drizzle your favourite burger sauce over the top of each taco. This creamy sauce will bring all the flavours together, adding a delightful finishing touch. Serve your tacos warm and enjoy the satisfying combination of textures and flavours in every bite.
