Pulled Chicken Recipe

This is hands down, one of the easiest ways to cook bulk chicken and have protein on hand to add to salads, wraps, rice and more. It's simple, flavoursome and you can put it on before you head out and dinner will be ready when you get home. All you need is a slow cooker which you can pick up from K-Mart or Target for around $30.
What's In It?

5 x Chicken Breasts
1 x Can Lite Coconut Milk
1 x Brown Onion Diced
2 x Garlic Clove Crushed
2 x TBSP Siracha
2 x TBSP Reduced Sugar & Salt BBQ Sauce
1 x TBSP Garlic Powder
1 x TBSP Coriander Powder
1 x TBSP Cumin
1 x TBSP Paprika
2 x TSP Salt
2 x TSP Pepper
Let's Cook!
Heat up your slow cooker by plugging it in and turning it on to high. Line the bottom of the ceramic dish with olive oil. Then throw in your chicken, onion and garlic. Once this is done, start adding your sauces and spices one by one until everything is in the ceramic dish. Stir through so that the chicken is coated in all the deliciousness. Then all that needs to happen is to cook on high for 4-5 hours.
Once that is been cooking for at least 4 hours it is time to shred. Using two forks, rip apart the meat while it’s in the slow cooker. Now we want all of the shredded chicken to soak up the aromatic sauce. Leave it to cook for an additional 30min - 1hr on a low heat.
Serve the pulled chicken over rice, in a wrap or stir through fresh pasta.
