BBQ Beef Brisket Slow Cooker Recipe

I wanted easy without sacrificing flavour or having a dish with far too many calories in it. Tough ask but I think I managed both with this dish. The secret is a low sugar BBQ sauce like Mingle to give that rich flavour without stacks of sugar calories. Give it a crack one winter evening.
What's in it?:

1KG Beef Brisket
Salt & Pepper
2 Onions Sliced Thin
2 Cloves of Diced Garlic
1 Sprig of Rosemary
4 Bay Leaves
1 Pouch Mingle BBQ Sauce (250g)
(Or your choice of BBQ Sauce - this one is just low sugar)
Let's Cook;
Start by seasoning the brisket with a good amount of salt and pepper. This step is key for boosting the meat's flavour and getting a nice crust when cooking. Make sure to rub the seasoning all over the brisket.
Next, heat a skillet over high heat and add a couple of tablespoons of olive oil. Once it’s hot, add the brisket and sear it on all sides for about 4-5 minutes until it’s nicely browned. This adds flavour and keeps the juices in!
While the brisket is browning, slice up a couple of onions and mince some garlic. Grab some fresh rosemary and a few bay leaves to add flavour. Layer the onions, garlic, rosemary, and bay leaves in the slow cooker as a base for the brisket.
Once the brisket is browned, place it in the slow cooker on top of the aromatics. Pour BBQ sauce over it, making sure it’s well-coated. You can also add a splash of beef broth or water for extra moisture. Cover and cook on low for 8-10 hours until super tender.
After cooking, preheat your oven to 200°C. Take the brisket out of the slow cooker and put it on a baking sheet. Bake for about 12 minutes to get a nice caramelised crust. This will give you a great texture contrast between the tender meat and crispy outside!
